Who knew I would be such a fan of Pancakes and Pancake day (16th February) is the best day to indulge in all the sweet and savoury. Also known as “Mardi Gras” and “Fat Tuesday” in France and USA. It is a day most enjoyed by the sweet tooth and brings the family together around the table. Also a nice little treat to take into work. I know family together, going into work seems a little odd to mention considering we are still on Lockdown in the UK. But it will happen again, soon I hope!
Pancakes Made Easy Peasy
As you all know already I’m vegan so the pancakes I am sharing contain no animal products. That includes no dairy (milk, eggs or butter). Can pancakes be made vegan err hell yes! Just swap out the animal products for the natural alternatives and there are a lot of alternatives now days. Pancakes aren’t just for fruit but also for *cheese and *meats (*vegan). The pictures in this post were taken by me.
The Fluffy Pancake
How to – 6 Ingredients click here
Refrigerated – 1 cup non-dairy milk unsweetened plain ( I love the brand Oatly)
Condiments – 2 table spoon vegan butter (Flora plant power is another favourite!)
Baking and Spices – 1 cup all purpose flour, 1 table spoon baking powder, 1/4 table spoon salt and 1 and 1/2 table spoon vanilla extract.

- 75g/2½oz gram flour (chickpea flour)
- ¼ tsp gluten-free baking powder
- ¼ tsp smoked paprika
- ¼ tsp dried thyme
- ¼ tsp sea salt
- 2 tsp olive oil
- 1 small red onion, finely diced
- 6 sundried tomatoes, finely diced
- 1 ripe avocado, sliced
- 460g/1lb jar roasted red peppers, drained and sliced
- 1 small bunch fresh coriander, finely chopped
- freshly ground black pepper

2 Apples, 1 Gala apple
3 tbsp Maple syrup
1 tsp Baking powder, 1 tsp Baking soda, 1 tbsp Brown sugar or coconut sugar, 3 tsp Cinnamon, 1 pinch Salt
2 tbsp Apple cider vinegar
1 tbsp Coconut oil and more for frying, 5 decilitre (2 Cups) almond milk

1/2 cup walnuts, 2 teaspoons maple syrup (divided) and more for drizzling on top, 1 very ripe banana and a few slices for garnish, 3/4 cup unsweetened plant-based milk e.g. rice milk, 1 teaspoon coconut oil, 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, 1/3 cup chocolate chunks or chocolate chips (save a few more to add on top), 4 tablespoons peanut butter
